3-Ingredient Happy Hour: The Bee’s Knees

Happy weekend, and welcome back to 3-Ingredient Happy Hour, the weekly drink column featuring super simple yet delicious libations. This week I want to talk about a sweet and sour, classic cocktail that’s perfect for refined patio sipping: the Bee’s Knees.

The Bee’s Knees is a super simple sour that’s been around forever. It’s a favourite of mine because — while it’s served in a fancy coupe glass — it’s easy to make, super delicious and made with ingredients you probably already have in your kitchen. Though most recipes have you prepare a syrup out of equal parts honey and water before adding it to the beverage,

I like to use straight up honey because, not only am I’m lazy, but I really, really like the taste of honey. To get buzzed on this beverage, you will need:

  • 60mL gin
  • 30mL fresh lemon juice
  • 1 tablespoon of honey

Add everything to a shaker and stir until the honey is dissolved. Add ice, and shake vigorously for at least 15 seconds. (Hard shaking will smooth out the syrupy quality of the honey, and give you a nice foam on top.) Strain into a coupe glass and drink your reward.
