Make A Delicious, Crispy Pizza Out Of Sweet Potato Mash


You usually have some leftover mash after a big baked dinner. (It’s one of those things it can’t hurt to make too much of.) This goes doubly for mashed sweet potatoes, which aren’t to everyone’s taste. Next time, instead of nuking – and ruining – your leftovers in the microwave, try creating this crispy potato pizza instead.

The concoction in the video above was made from Thanksgiving leftovers, but you can apply the same principle to the remnants of any baked dinner. All you need is a half-bowl of mashed sweet potato, an egg, leftover meat and some sauce or gravy.

If you’ve never made your own pizza dough, don’t worry, this one is super simple; it’s really more of a “flat bread” dough than true pizza dough. Just scoop out your mashed sweet potatoes, add an egg, mix that up, and gradually incorporate flour until you have a nice, elastic dough. Sprinkle more flour onto your work surface, roll it out, and transfer to a parchment-lined sheet pan.

From there, it’s kind of a choose-your-own-adventure kind of deal. The Brothers Green use creamed spinach as their sauce, but you could use gravy, or any other creamy casserole dish. Top with poultry meat, shredded cheese and any other leftovers you think might work as pizza toppings.

Pop the whole thing in a super hot oven (250 degrees Celcius) until the cheese is melty and the crust is crispy. Once you’ve devoured that, finish watching the above video to get even more creative leftover inspiration.
