There’s no arguing that the shell is the most unappealing part of the prawn, but — with the right prep and seasoning — they can be transformed into a crunchy, savoury snack.

There pretty easy to make too. You’ll just need prawn shells (vein and antennae removed), corn starch, salt, and whatever other seasonings you like on crunchy things. Coat them in the cornstarch and salt, fry them up crispy, and top with fresh herbs, cracked pepper, or chilli flakes.

If the idea of putting prawn shells directly into your mouth is still a little much for you, don’t worry, you can always use them to make a delicious stock.
