Transform Cold Mashed Potatoes Into A Delicious Dip

Mashed potatoes are a brilliant cold-weather comfort food but, when combined with olive oil, lemon and garlic, they are the perfect base for a savoury dip.

This tangy, garlicky spread — which is Greek in origin and called sklordalia — is pretty easy to make and requires ingredients you probably already have in your kitchen. First, blanched almonds, lemon juice and raw garlic are blitzed together in a food processor to make a delicious, pungent paste.

This heavenly mixture is then mixed with fluffy mashed potatoes until smooth and spreadable. The recipe from Serious Eats has you mash potatoes specifically for this purpose, but this would also be a great way to use up any cold mashed potatoes you have languishing in your refrigerator (assuming you are the type of person who ever has leftover anything).
