The Easiest, Tastiest Ice Cream Cake Is Just Ice Cream Sandwiches Stacked And Frosted

I don’t really consider a dessert complete if it doesn’t include ice cream. As such, it may not surprise you to find out that my favourite cake is ice cream cake, and I’m pretty obsessed with this little number from Epicurious , which is really just a bunch of ice cream sandwiches stacked and frosted with whipped cream.

Though it may seem overly simplistic, it actually makes for a super delicious and visually stunning dessert. And yeah, it’s super duper easy to assemble, but that shouldn’t make you angry. Just whip up some cream (adding mint extract as they do in the link below if desired) and use it to stack 16 ice cream sandwiches on top of each other, four to each layer. Freeze for an hour, frost with remaining whipped cream, and freeze for another half an hour. After you devour that, play around with different sandwich/cream flavour combinations. I’m particularly fond of the Neapolitan ones.
