Make An Extra-Crispy Tortilla Pizza With A Cast Iron Skillet

These crispy tortilla pizzas are easy to make, take very little time, and are the perfect snack for any occasion. Here’s how to make your own at home.

J. Kenji López-Alt at Serious Eats was not a fan of tortilla crust pizzas originally, so he decided to find a way to make them amazing. While a baking sheet or pizza stone is usually best for making great homemade pizza, López-Alt suggests you avoid them entirely when you want to use a flour tortilla for your crust. Instead, you want to place the pizza in a cast iron skillet.

Start by putting some oil in your skillet, then heating it on high heat until the oil starts to shimmer. Once it does, reduce the heat to low and wipe out the oil with a paper towel. Next add your flour tortilla to the skillet, making sure the side with the smaller bubbles is facing down (this will ensure crispier crust). Now add your sauce, cheese, and favourite toppings. Once your pizza is topped off, stick the skillet under your broiler for about three minutes to finish cooking, and your pizza will be ready to eat.
