Avocado Is The Perfect Ingredient For Silky, Creamy Soup

Avocado Is The Perfect Ingredient For Silky, Creamy Soup

Not everyone is a fan of cold soup, but if you are, you probably appreciate the rich, creamy texture of most chilled summer soups. Next time you whip up a batch, try avocado.

As Epicurious explains, blended avocados are the perfect texture for creamy soup. They write:

Toss some avocado into your blender next time you’re making a batch of cold soup and it will not only pump up the nutritional value of your meal, it will make that soup silkier and thicker. Blended up with yogurt and topped with a fresh tomato salsa, this no-cook soup is 100% refreshing and 100% slurp-able.

It’s great as a vegan option, too. They say you’ll still get the same creamy texture with or without dairy. (Here’s a recipe with avocado, corriander and tomato, for example). If you like chilled, savoury soups, it’s worth a try. Epicurious offers a few more versatile avocado suggestions, so head to the full post at the link below.
