Making your own homemade energy bars can be as simple or complicated as you want, and this recipe is as simple as it gets. A couple of ingredients, your trusty food processor, a few minutes in the fridge to firm up and you’ll have a snack you can enjoy at home or on the go.

INGREDIENTS
200g medjool dates (pitted)
150g regular dates (pitted)
200g cashews
100g choc chips
METHOD
1. Crush cashews in a sandwich bag using a rolling pin
2. Blitz dates in a food processor, then add in the cashews and chocolate chips — and blitz again
3. Spread the mixture in a shallow baking tin lined with greaseproof paper, condensing it as much as possible to prevent it from crumbling later. Chill in the fridge for 20 minutes.
4. Cut and serve
They also note that if you want something a little less sweet, or without refined sugar, you can always just omit the chocolate chips and leave everything else as-is. Quick, simple and finished in a matter of minutes. The only tough part is wondering what to do for the half-hour while the bars set up in the fridge.
