We’ve talked about easy ways to pickle onions before, but this method from Daniel Gritzer at Serious Eats only requires two ingredients, and doesn’t require any heating. All you have to do is cut up your onions (slices and rings are more versatile), stick them in a bowl and pour enough red wine vinegar in the bowl to cover all the onion slices. Wait for 15 minutes and you’re done. You can keep the onions soaking for up to a couple of hours, but the onions will soften and change flavour pretty fast. And if you use red onions, you’ll get an awesome hot-pink colour that can add some spectacle to your dish.
