If you want some super fluffy eggs, Kelli Foster at The Kitchn suggests you ditch the traditional scrambled egg fixings and go for some bubbles. All you have to do is add one tablespoon of soda water per egg. It’s just enough to give your eggs a bubbly, fluffy lift without making them runny, and you won’t taste any of the soda water once they’re ready to eat. Just make sure you use a flavourless soda water.

Honestly, for the best scrambled eggs, a small amount of hot English mustard and a splash of milk (plus salt/pepper). Tastes much better than without.
If you don’t have soda water, just plain tap water will make the eggs fluffier!
