Today, America’s most infamous burger outlet — Carl’s Jr — opened its first restaurant in Australia. Unfortunately, it’s located way out on the central coast of NSW. If you’re keen to try these extra-thick burgers but don’t fancy a trip to Bateau Bay, you need this mouth-watering DIY recipe from fast-food demystifier Todd Wilbur.
The “copycat” instructions featured below originally appeared on Todd Wilbur’s Top Secret Recipe blog. They explain how to make Carl’s Jr’s popular Western Bacon Cheeseburger.
This burger (or “sandwich” to give it its US moniker) consists of a charbroiled all-beef patty, two strips of bacon, melted cheese, two crispy onion rings and BBQ sauce on a seeded bun. This is one of the fancier burgers that Carl’s Jr offers, which makes it good choice for DIY cooking. Here’s how to roll your own:
Ingredients:
- x2 frozen onion rings
- 1/4 pound [115 grams] ground beef
- x1 sesame-seed hamburger bun
- x2 slices bacon
- salt to taste
- x1 slice American-style cheese
- x2 tablespoons hickory-smoked barbecue sauce
Instructions:
- Preheat a clean barbecue to medium grilling heat
- Bake the onion rings in the oven according to the directions on the package
- Form the ground beef into a flat burger the same diameter as the bun. It’s best to pre-form your patty and store it in the freezer, then cook it frozen.
- Grill the faces of the top and bottom bun in a frying pan on the stove over medium heat. Keep the pan hot
- Cook the bacon slices in the pan
- Grill the burger for 3 to 4 minutes per side, or until done. Lightly salt each side
- Spread 1 tablespoon of the barbecue sauce on the faces of each bun, top and bottom
- Place both onion rings on the sauce on the bottom bun. Next stack on the burger, then the cheese and the 2 bacon slices, crossed over each other
- Top off the sandwich with the top bun
For the sauce, Wilbur recommends Bull’s-Eye Hickory Smoke BBQ sauce, which you can find in numerous specialty stores. Alternatively, any tangy BBQ sauce with a smoky finish should fit the bill perfectly.

What’s the difference between this and a recipe for a generic bacon cheeseburger?
Surely, one has to start with a semi-nude, big-busted bikini clad nubile young lady…
Based on the ads, it’s one of the essential ingredients.
The burger in the picture is not the one in the recipe; it doesn’t have sesame seeds on the bun, and there’s something else (battered onion rings?) under the burger patty which is not mentioned in the recipe.
