Make A Batch Of Base Salad Dressing And Tweak It For Every Salad

Knowing how to make basic mother sauces that you can customise throughout the week makes cooking faster without sacrificing great flavour. You can do the same for your salads by creating a “mother” salad dressing to tweak before you serve.

Create your base dressing by using the right ratios of acid, oil and other flavours. If you need a little inspiration, Iron Chef Geoffrey Zakarian has a simple vinaigrette recipe you can try:

  • 1/4 cup red wine vinegar
  • 1 teaspoon minced shallots
  • 1/4 cup plus 2 tablespoons canola oil
  • 1/4 cup plus 2 tablespoons extra virgin olive oil
  • Salt and pepper

Once you’ve made your batch of base dressing, you can use it as-is, or portion some out each evening and then add other ingredients to mix up the flavours. Add a little heat with cayenne pepper, or bring in bright notes with lemon juice or fresh herbs. Sweeten up your salad by adding a spoonful of jam, or make your dressing richer by roasting the shallots or mixing in mustard. Ultimately, this is about getting variety by using extra ingredients you already have in your pantry or fridge to spice up your base dressing.
