Add Soda Water To Your Batter For The Fluffiest Waffles Of Your Life

I love a good waffle. That perfect combination of its crisp exterior and tender, fluffy insides is one of the few things that can get me out of bed before nine on a Sunday morning. Cook’s Illustrated’s new recipe promises to make an already great thing even greater.

Using the power of carbonation, soda water (or seltzer) is combined with powdered buttermilk to replace some of the liquid buttermilk you would find in a traditional waffle recipe. The bubbles help inflate the batter for the fluffiest waffle of your dreams, while oil helps keep the outside crisp by repelling “whatever interior moisture managed to rise to the surface.”

One thing to keep in mind: make sure you use actual seltzer or club soda, not sparkling water. Otherise it won’t be bubbly enough for this application.
