When you store your spices, organise them into “spice kits” so you can quickly pair the best combinations. Follow these guidelines for better quality spice blends:

  1. Find the freshest spices you can. You’ll get more flavour from fresher spices, so stop by your local store that specialise in bulk spices. If you don’t have a spice store near you, try searching online.
  2. Toast your spices to coax even more flavour from them. Toast them in a skillet for 1-2 minutes. When they start to brown, remove them from the heat.
  3. Grind them up as finely as possible. Use a spice grinder (or coffee grinder) to break the spices down into a fine powder. Your results should be a uniform texture with no clumps.
  4. Use them quickly. Get the most from your spice blend by using it within three months. Write the “expiration” date on the bottle so you know when you should use it up by.
