Over at the TwoPorkSwords blog, David Connors has a step-by-step guide to the perfect crackling, from the setup, to the roaster, to heating in segments, to the fine art of crackling. I’ve never had a crack (heh) at the meal myself, but there are a few tidbits to learn in there regardless of whether you plan on cooking that specific meal. And the post promises plenty of crackling to go round when this method is used, which has always been my complaint before. There goes all that exercise.
