It’s a video that will please anyone interested in the chemistry of food and practical baking tips. For example, if you like cookies a little brown (and flavourful), don’t follow that recipe that says to bake at 180C, because you won’t get the necessary Maillard reaction. Also, use your nose — “a sensitive, scientific instrument” — to tell you when your cookies are ready.
