Make A No-Bake Fridge Cake To Stay Cool


In hot summer weather, the last thing you want to do is bake. For a no-heat sweet treat, a fridge cake is a great solution.

Often referred to in the US as an “icebox cake”, you’ve probably encountered a variation on this recipe over the years. All you need is some heavy whipping cream, some sugar, a little flavoring (such as vanilla, hazelnut or almond extract), and your favourite biscuit. You’ll mix up the flavoring and sugar with the whipping cream, layer in your biscuits and cover them over with the rest of the cream. Put it in the fridge and let it set for a few hours or overnight.

It’s no substitute for a real cake of course, but when the temperature goes up and the thought of a hot oven makes you wary, you’ll realise that this classic recipe has a place in modern kitchens. Plus, it’s super-easy to make.
