Muffin Pan Omelettes Let You Make Breakfast For The Week In One Batch

When you’re getting ready in the morning it might be difficult to take the time to make a proper breakfast, especially if you’re trying to get more eggs in your diet. Here’s an easy way to make mini-omelettes in a muffin tin that you can quickly reheat in the microwave before heading out the door.

Culinary weblog Coleen’s Recipes shares how to make mini-omelettes in your muffin/cupcake pans. Preheat your oven 190°C, spray the pan with your cooking spray of choice. Whisk eggs, milk, oil, baking powder and salt and pepper together. Divide whatever chopped meat and vegetable toppings into the sprayed cupcake wells, fill each well with the egg mixture add some shredded cheese on top if you like, and then bake for around 20 minutes. You can make a batch on Sunday evening, put them in a freezer bag in your refrigerator, and store any mini-omelettes you won’t use that week in your freezer. That way each morning all you have to do is reheat one or two mini-omelettes and perhaps add toast.
