DIY Citrus Salt

Specialty salts can bring a lot of flavour to foods but can be expensive — especially citrus salts that cost several dollars for a bit of salt and fruit zest. Instead make your own by combining sea salt with the zest from your citrus fruit of choice and bake in the oven.

Household weblog My Own Labels recommends the ratio of 1/2 cup of salt to one tablespoon citrus zest. Mix well and spread on a cookie sheet and bake at 110°C for about an hour.

Citrus salt goes wonderfully with fish, dark chocolate, or on the rim of a margarita glass. The salt will last unrefrigerated in a sealed container for a few months.
