Cook Eggs In Capsicum Or Onion Rings For A Simple, Clever Breakfast Treat


Capsicums and onion rings make ingenious ring moulds for eggs in the frying pan. Not only do they impart wonderful flavour to the egg and keep egg contained, they also look so beautiful.

The Apron Strings blog shows off this simple technique. Basically all you have to do is, put 1.25cm slices of the onion or capsicum into the lightly-oiled frying pan and crack an egg into the middle. You can even make eggs in avocado slices (don’t forget you can also bake an egg in an avocado).

The ring moulds are a variation of the classic egg-in-a-hole concoction where you cook an egg in the middle of a slice of bread.
