Cook Steak Perfectly By Starting Frozen

This modernist technique for cooking steak may sound absolutely bizarre, but Kitchen Konfidence food writer Brandon Matzek says this frozen seared steak method is an easy process that results in perfectly cooked steak: "The contrast of the salty, golden crust and the smooth, buttery centre is just pure heaven."

The method involves freezing the steak for an hour then salting it generously and searing it in a layer of safflower oil in a cast iron pan. Because the steak is frozen, you don't risk overcooking the meat.

Then finish the steak off in the oven at a low temperature for up to an hour.

Besides perfectly cooked steak, here's another reason to give this technique a try: When you get home from work, you can take the steak straight from the freezer to the pan, and there's no need to bother with defrosting. Hit up the link for more details.

    Ugh that takes forever! when I want a steak, I want it in less than an hour thanks!

    Getting home from work and taking a steak out of the freezer to the pan will not yield the same results.

    The recipe specifically mentions placing the steak in the freezer for one hour only, and it will not be completely frozen.

    You could also just cook the steak perfectly to begin with...

    Anyone would think the place was called 'Things to Purchase and How to Do Things the Way You've Always Done', the level of disappointment I see.

      not when how to do things the way you've always done them is clearly better than the new suggested ways doing these things.....

        How hard is it to work out how to cook a steak properly in the first place. I can cook steak right first time, every time. It took me a few goes to get it right but you get a feel for it.

        As for taking it out of the freezer when you get home, I take my meat out of the freezer the night before and chuck it in the fridge to defrost. But I have this magical ability to think ahead about this stuff and I understand some people find it really difficult to think a whole 24 hours in advance about meals, normally the same fools who spend $100 a wekk buying lunch everyday instead of taking it from home.

          those are also the fools who spend $100 a week buying lunch everyday and keeping those at the lunch bar in business, which in turn allows the owner of the said lunch bar to spend their hard earned money elsewhere. no spend = recession.

            How generous of you to spend 5x as much on a Sandwich to give some guy a profit.

    this make no sense, why the hell would you spend so much time especially after work when you want food within 30 minutes to spend over an hour cooking meat. you want perfectly cooked steak in less time, let it get to room temperature first then cook it for about 5 minutes a side on medium to high heat. JOB DONE!
