Bake An Egg In An Avocado For A Healthy Breakfast

Avocados are amazing things — they’re delicious on their own, but they also have a lot of healthy fats, dietary fibres and vitamins and despite their high caloric value, they’re remarkably easy to prepare. If you have an avocado that’s too firm to use for something else, or you’re just in the mood for something new and healthy for breakfast, slice it in half, remove the pit and carve out a little space in the centre. Crack an egg where the pit was and bake. In a few minutes, you’ll have a delicious, protein and vitamin-packed breakfast treat that’s rich enough to keep you going all morning.

The recipe itself is pretty simple, and comes to us thanks to the blog The Family Kitchen. Just prep the avocado as described and put it in a 180°C oven, or as the site describes, put it in a frying pan on medium heat and cover it for about two-three minutes. When the egg has set, add a little salt and pepper and you’re good to go. Avocados are used in all sorts of breakfast dishes, but this is a great example of using the avocado as a breakfast dish… and a pretty tasty one at that.

Use the excess avocado flesh – the bit you shell out to fit the egg in – as a spread for the accompanying toast, instead of butter.

Remote the pit? Is this a typo or is the pit supposed to continue working from its new location :P ?

It’s a typo. That should be “remove”.
